Yesterday's dinner is something I do often because its easy, takes care of your left overs and everyone in my house likes it. Its a rice with vegetables and sausage or chicken. I usually do it with left over BBQ chicken but yesterday I had a piece of sausage that was asking to be eaten.
All you need is:
- cooked rice
- veggies, whatever you have at home
- cooked chicken or sausage
- salt and pepper
- little bit of butter
In a deep pan I melt butter and add your veggies, cook them until soft. I use carrots, celery, zucchini ,broccoli, red pepper, snap peas. The harder veggies will go to the pan first because they cook longer.
In separate skillet I fry my sausage or chicken, the sausage didn't need any butter because it can cook in its own grease, just cook slowly and the chicken will need some.
When the veggies are almost done I add to them cooked rice and the meat and mix it in the pan, season with salt and pepper and enjoy.
