It is the end of September and my balcony is still growing, I have plenty of peppers and beans, plus basil and other herbs. This week I'm planning to cut some basil for pesto and for drying, I also will be cutting all my herbs and making oils for salads and cooking. Beans are finally producing, the first ones I planted in Spring didn't produce any beans, so I have been using them in different dishes or just eating them for breakfast.

Bananas.
Just saving some bananas from waste here, I cut them in slices and freeze on a baking sheet and then transfer it to a bag, this way the bananas are not a one big chunk. Also made some more pesto from my basil.

Stuffed zucchini.
This year I have been making more dinners with zucchini and one of the dishes is stuffed zucchini. I stuffed them with cooked quinoa and fried veggies plus the insides of the zucchini. I cut all the veggies really small (pepper, mushrooms, onion, zucchini) and fry them, mix it with the quinoa and stuff raw zucchini, add graded cheese on top and bake it in the oven with a little bit of oil on the bottom of the baking dish. It is our favorite dish of the summer.

Party.
My daughter has a birthday this month and the past Sunday we had a small party. I made few small dishes like stuffed mushrooms and zucchini.

Weekend.
Yesterday was a beautiful day and a busy one too. I cut some herbs for drying, made two loafs of bread and some scones. I enjoyed a tea on my balcony and in the evening we went for a walk. I also planed a week of schoolwork for my younger daughter and did some meal planning. I listened to an audio book and read a bit too. Lately I spend lots of time listening to books while I work and actually created a reading challenge for myself but I will make a separate post about that.
