Roasted red pepper and sweet potato soup.

I made this soup few weeks ago and it was so delicious.

You will need:
- 6 sweet red peppers, chopped
- 4 sweet potatoes, peeled and cubed
- 2 onions, chopped
- 4 cloves of garlic
- 3 tbsp extra-virgin olive oil
- 1 1/2 tsp dried Italian herb seasoning
- 1/2 tsp salt and pepper
- 8 cups chicken or vegetable broth

1. In roasting pan, toss together red peppers, potatoes, onions, garlic, oil, Italian seasoning, salt and pepper. Roast in 425F oven, stirring once, until tender and golden at edges, about 1 hour.

2. Add roasted veggies to a pot, add the broth and add 2 cups of water, bring to boil and puree in food processor in batches.

3. Garnish with sour cream or plain yogurt and parsley.

Baking.

Please forgive me for not posting as often as I should, my big spring craft show is in two weeks so I'm sewing like crazy. I do so much less at home when it's show time and when I do something I usually forget to take pictures because my mind is on sewing.

I did some baking this week and managed to take few pictures. I made my yogurt pound cake and I had some melting chocolate left so I used it on top.



I also made buttermilk scones and lemon loaf.











Can't wait until after the show so I can start spring cleaning and do some gardening.

Shopping.

Yesterday I made a trip to my bulk store to pick up few treats. We usually stick with sweets that I bake but this time we had a craving for some chocolate. I got few dark chocolate covered almonds with coconut - my favourite, some chocolate eggies - they smell so good, I got jar of BBQ chips for my husband and a jar of graham cookies ( my kids love them), which I usually buy in a grocery store in a non- recyclable  package so I was really happy that they had it. They are a little bit bigger then the packaged ones but taste the same.





My steps to being zero waste are going well, sometimes I find challenging and difficult to find products that I need, but don't want to buy all that plastic and packaging. And other times I find difficult to stop myself from buying something that I normally would. I don't think I will ever be completely waste free, there are things that I am not willing to give up because they make my life easier so I think that maybe calling, what I'm trying to do, zero waste is  wrong. I will stay on track with the trash patrol and awareness of where my money goes and what we buy. So far we reduced our garbage by half, my kitchen cupboards are not stuffed with packaged goods and I ave more money saved.
