Bananas.

 We eat a lot of bananas but sometimes we have to many and they go really yellow before we can eat them. In that case I freeze them and use them in smoothies. Everybody has different way of freezing bananas, I know some people just brake them in half or even freeze them whole. I always cut it in slices and freeze it on a cookie sheet first before I put it in a bag. The reason for that is that I don't have very powerful blender and big pieces will not even turn in my blender. I also defrost them slightly before I make the smoothie.

This smoothie is from frozen bananas and strawberries.

Reading.

This month has been so good, I read couple books and listened to few. I think I will have a really hard time picking my favourite book because I loved them all. Some of the books are The Beautiful and The Damned ( can't wait for the next one), I also read The Morning Flower by Amanda Hocking, one of my favourite authors and right now I'm reading the last book in the trilogy - Ever After. I also listened to an audio books, one of them is The Return by Nicholas Sparks, again one of my favourite authors, and right now I'm finishing the last book in the Partials trilogy by Dan Wells.

Apples.

 Over the weekend I made an apple pie.




And with the apple peels I made a drink, just add some prunes, dry apricots and dry cranberries, water and a little bit of sugar.

Soup.

 I made a asparagus soup the other day all from frozen veggies like asparagus and zucchini. I added fresh potato, carrot, onion and garlic.

Tofu.

 Or favorite breakfast is scramble tofu, I treat it as a scramble eggs so I add what I would normally add to eggs. Every time is different depends on what we have in the fridge. This time we had mushrooms, zucchini and kale. I add onion and garlic, turmeric, kale seasoning and nutritional yeast.

Morning routine.

 My mornings start really early because I love the quiet time before everybody wakes up. It is My time, time to relax, prepare for the day without being interrupted. I usually wake up 5am,(sometimes 4am), feed the cats and wash up. Then I light a candle since it's still dark and spend about 15 minutes reading the Bible. This was one of my goals this year to read the Bible and get closer to God. After that I clean the dishes, sweep and clean cats litter, make a tea and spend some time on my computer writing posts and doing research. After all that I still have time for breakfast, reading and cross stitching. I think that having a morning routine sets you well for the rest of the day. When I have days that I sleep longer I feel out of place, straggling all day to catch up.

Beet burgers.

 For Christmas I always make red borscht but after I have a lot of veggies left, mostly beets. I didn't want it to go to waste so I made burgers with them, no recipe just mixed few things and tried. I mixed the veggies from the soup in a food processor with a can of chickpeas, seasoning and a bit of flour. They came out good, however they are really soft so it's harder to fry them. I made so many that I froze few for future dinners.

Reading.

December is a really busy month and so I didn't have time to read much. I only read 3 books. 




2020 was a good year I never in my life read so many books. 159 books, most of them were audio but still 62 physical books that is a lot like for me. 


I hope that 2021 will be as good as 2020
