In my Garden.

I made some changes since last week, I removed beets, swiss chard and bok choy because of the bugs and got some more basil and mint. I also had insects on my kale but those were easy to get rid of. I have another container full of beets and they were fine until today. On a happy note, my herbs are growing really well, I can see small cucumbers and tomatoes and my potato is blooming.

Scones.

I love baking and cooking. I have days when I wake up early in the morning just to make some scones for breakfast and today was one of those days. I have a recipe that I use all the time just add different dry fruit.

Buttermilk Scones.
- 2 1/4 cup all -purpose flour
- 2 tbsp granulated sugar
- 2 1/2 tsp baking powder
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup cold butter, cubed
- 1/2 cup dry fruit (blueberries, currants, cranberries)
- 1 cup buttermilk
- 1 egg, lightly beaten

In large bowl stir together flour, sugar, baking powder, baking soda, salt. Using pastry blender or 2 knives, cut in butter until mixture resembles coarse crumbs, (I use my hands). Stir in dry fruit, add buttermilk all at once, stirring with fork to make soft, slightly sticky dough. With floured hands press dough into ball, gently pat it into 2 cm thick round. Cut out scones with round cookie cutter or cut with knife to make triangles. brush tops with the egg, bake on parchment paper in 425 F(220 C) oven for 12 to 15 minutes or until golden. Transfer to racks and let cool.



 Delicious with home made strawberry jam.



With everything that I do I think of ways to not spend money on unnecessary things. This way I save space in my drawers and money, like the pastry blender. You could use two knives but I prefer my hands maybe it takes more time but its simpler.

Pickles.

Yesterday I took some time to clean my pantry, making room for all the jams that I'm making. My space is very limited so I have to be creative and sometimes jars get pushed really far and that's how I found two jars of last year pickles. I love making them and everyone loves to eat the crunchy snack but after a while they loose their crunch. Little softer pickles are the best for pickle soup so that's what became of the last two jars.

Raspberries.

Raspberries are one of my favorite fruits, they bring back memories from my childhood. Picking, juicing, making jams and eating strait from the bush. This year I made 5 jars of raspberry jam and 5 jars  of raspberry nectarine jam.

In my Garden.

This year I planted some new veggies and some of them are not happy, my bok choy is not growing well, it mite be because of all the rain we are having. Normally I would move the plant away from whatever its making it unhappy but this one is in my big planter and its just to heavy. On the other hand my potato and tomato are growing like crazy.

Breadcrumbs.

I don't remember when was the last time I got breadcrumbs in a store. I make my own from left over breads and that way I save the bread that was no longer good to eat and it would end up in green bin. Please don't think that I use moldy bread, because I don't, that one goes to the bin, but I try to save it before it happens.Very often there is a tray with cut up bread drying in my kitchen and when its all crunchy my kids love to help with the process.
